  • Blend together the flour, baking soda, salt and cinnamon until mixed well.
  • Add milk, eggs and melted butter.
  • Mix well until it looks like a pancake batter.
  • Cook pancakes on a pan sprayed with non stick cooking spray.
  • Eat and enjoy!

  1. Tried this but we were not impressed with the results. They were flat & just not what we expected. Will try once more since other reviews said they were fluffy, etc. We were disappointed w/ the results.

  4. We ran out of baking powder but really wanted pancakes so tried this. We made a third of the recipe and added a touch more baking soda than suggested, other than that all was done exactly the same. The recipe worked as described, the batter was thick and the pancakes tasted lovely. They did rise and were fluffy but obviously not as fluffy as with baking powder. Still, a very worthy substitute and definitely worth making. Thanks for posting.
     
  5. Valuable lesson learned with this recipe: Use baking powder in pancake mix. Without it, the 'cakes were heavy and doughy. They lacked the light & fluffy aspect, and therefore fell very short.
