ingredients
- 1 1⁄4 cups self-raising flour
- 1 tablespoon caster sugar
- 1 cup milk
- 1 egg
- 2 tablespoons oil
- little bit oil (for frying)
directions
- In medium bowl mix flour and sugar.
- Combine milk, egg and oil together.
- Add this wet mix to flour mixture.
- Stir with whisk until combine but don't over mix few lumps is ok.
- Spoon pancake batter on lightly oiled and preheated pan (no need to spread the mix) and cook on medium heat on both sides until golden brown.
- Serve with your favorite syrup and fruits.

Hanka, this is a brilliant recipe!<br/>I followed as written and had great success with making these pancakes.<br/>So quick and easy to make and so light and fluffy inside. I enjoyed mine with plum jelly and cream, DH had lemon and sugar and DS with honey and cream. We all loved them.<br/>These are just magnificent Hanka. I had the opportunity to have these delicious pancakes made by Hanka some years ago. I can tell you first hand they are fabulous. She shared the recipe with me and I have been making them ever since. Perfect brunch recipe! Made this for Little Miss (DD) who loves pancakes and she really loved this recipe. I used organic self raising flour and it was so much finer then regular flour, so I had to add a little extra milk. Otherwise I kept to the recipe and Little Miss demolished all of them on her own. Will be making them again on Pancake Day (21st Feb).. Thanks so much Hanka for a easy recipe.
