  1. Beat egg with hand beater until fluffy.
  2. Beat in remaining ingredients just until smooth.
  3. For thinner pancakes, stir in an additional 1/4 c milk.
  4. Grease heated griddle (To test griddle, sprinkle with a few drops of water. If bubbles skitter around, heat is just right.).
  5. Pour about 3 tbsp batter from tip of large spoon or from pitcher onto hot griddle.
  6. Cook pancakes until puffed and dry around edges.
  7. Turn and cook other side until golden brown.
