Pancit Bihon

"Traditional Filipino recipe. It may not look appetizing but it tastes delicious. My husband had to cover his eyes the first time he ate it but he said it tasted "completely different then it looked." My son, the picky eater and Gordon Ramsey wannabe, even had multiple servings of this dish."

  • Soak Pancit bihon noodles in warm water to soften; approx 7-10 minutes. After soak time place on cutting board and cut into 1-2 inch pieces.
  • In large wok or pan saute garlic and onion (not green) in olive oil.
  • Add chicken broth, shredded chicken and all vegetables until cooked. Approx 20 minutes.
  • Mix pancit noodles and add soy sauce cook for 5 minutes or until broth is soaked up and noodles are soft.
  • Add salt and pepper to taste. Cut lemon in half and squeeze juice over dish; stir and serve. You may not need whole lemon, depends on your taste.

I love to cook, I don't eat out very much because I always think to myself, I can make it better and then we get the bill and then I know I can make it better! I have high expectations when it comes to my cooking because I want to be able to cook as good if not better than my mom and grandma some day. I love to cook for others. Nothing makes me feel better about my skills in the kitchen then special meal requests.
