- 16 ounces rice noodles
- 1 chicken breast, cooked and shredded (may substitute pork)
- 2 cups chicken broth
- 1⁄4 cabbage, sliced
- 1 onion, sliced
- 3 garlic cloves, minced
- 1 cup cauliflower floret
- 1 cup snow peas
- 1 cup bean sprouts
- 1⁄3 cup scallion, diced
- 1 carrot, sliced julienne
- 2 tablespoons cooking oil
- 3⁄4 cup celery, diced
- 3 tablespoons soy sauce
- 1 liter water, cold
- salt, to taste
- pepper, to taste
- 5 kalamansi, sliced
directions
- Soak the pancit bihon noodles in cold water for 10 about minutes to soften.
- Add cooking oil to a large pan or wok with medium flame. Saute the garlic and onions.
- Add the chicken broth, shredded chicken breast (or pork) and the remaining vegetables, saute until cooked.
- Add the rice noodles and soy sauce, cook for additional 5 minutes or until the noodles have softened.
- Add salt and pepper to taste.
- Serve hot with sliced kalamansi on the side.
