Panettone French Toast

  • To make the syrup: Combine 1 cup of water and brown sugar in a heavy medium saucepan.
  • Bring to a boil over high heat, stirring until the sugar dissolves.
  • Boil until the syrup reduces to 1 cup, about 10 minutes.
  • Remove from the heat and whisk in the cream and cinnamon.
  • Keep the syrup warm. (The syrup can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm before serving.).
  • Meanwhile, prepare the French toast: Preheat the oven to 200 degrees F.
  • Trim the bottom crust of the panettone.
  • Starting at the bottom end of the panettone, cut it crosswise into 6 (3/4-inch thick) round slices (reserve the top piece for toast!).
  • In a large bowl, whisk the eggs until well blended.
  • Add the cream, milk, and sugar and whisk until well mixed.
  • Melt 1 tablespoon of butter on a large nonstick griddle over medium heat.
  • Dip 3 slices of panettone into the custard, turning to allow both sides to absorb the custard.
  • Grill the soaked panettone slices until they are golden brown and firm to the touch, about 4 minutes per side.
  • Transfer the French toast to a baking sheet and keep them warm in the oven.
  • Repeat with the remaining butter, panettone slices, and custard.
  • Transfer the French toast to plates.
  • Dollop the mascarpone atop each.
  • Lightly dust with the powdered sugar.
  • Drizzle the cinnamon syrup over and around the French toast and serve immediately.

  1. Discovered a large panettone behind some "stuff", which was bought before Christmas LAST year, and was just sitting in the cellophane bag and box, not frozen, nor protected any other way. We looked it over -- no evidence of mold -- was a tad dry, but we toasted a slice and it appeared fine. DH prepared half of this recipe for French Toast (not the syrup)-he topped with maple syrup and I, with cinnamon/sugar. YUMMMM! We have since picked up some newer ones, and will have this when the family comes to spend the night. Thanks for posting this, WN. DH NEVER misses a Giada show -- she has such GREAT teeth !
     
  2. This recipe is AWESOME. I make it every New Years day. I always make the cinnamon syrup the day before. If the Panettone is too fresh then it can get mushy and fall apart. Its a good idea to slice it the day before and let the slices dry a bit, then put them in a plastic container and use them the following morning. Its also good to slice the rounds into quarters since theyre easier to flip and you get more pieces.

I did not make the syrup because I ran out of time; I used regular pancake syrup instead. Will try again with the syrup; it sounds so good.
     
  4. Absolutely delicious! Definitely worth trying if you at all enjoy French toast! Loved the cinnamon syrup! The only thing I did not include was the final dusting with powdered sugar! I've since moved to the east coast to a small village in Northern Virginia - a huge change! We moved here mainly so we could live in an area better suited to raising children and closer to family. Although it's an adjustment, we really love it here. My husband and I were married in Feb 2003 and had our first daughter, Kylie, in Aug 2004. Our second daughter, Katie, was just born in July 2006. I was an HR Director until I became Mom, and I wouldn't trade this job for anything in the world! I began cooking when I became a stay-at-home-mom, mostly out of necessity. We used to eat out for every meal...and I do mean EVERY meal. When our income was cut in half after my "early retirement", eating out was no longer an option. Therefore, if I was going to continue to eat all the delicious food I was accustomed to, I was going to have to...oh, the horror!!!...COOK IT MYSELF!!! I had grown up baking with my mom, but hadn't actually baked in years and had always left the cooking to her. To my utter surprise and delight (not to mention my husband's SHOCK and delight)...I loved it!
