“This is a fantastic little starter, the figs look just like little flowers. If you can, use brown sugar and wild honey, the give more rustic taste. Original recipe is from Conrad Gallagher's "In 3 easy Steps" cookbook.”

Directions

  1. Open the figs by scoring them on the top and gently squeeze from the bottom so they "open up".
  2. Wrap the ham around the open figs, and spoon some ricotta in to the openings.
  3. Sprinkle the sugar on the ricotta, and place under hot grill until the figs are warm and cheese starts to brown.
  4. Drizzle with honey and serve immediately.
