  • Preheat the oven to 200°C Spoon the olive oil into a roasting pan and add all the vegetables, tossing to coat.
  • Sprinkle the vegetables with cumin seeds (if using).
  • Place two sage or basil leaves on top of each chicken breast, then season with salt and pepper.
  • Wrap a slice of Parma ham around each chicken breast.
  • Arrange the chicken breasts on top of the vegetables. Roast for 30-35 minutes, or until the chicken is cooked and the vegetables are tender. Serve.
