Parmesan Crusted Cauliflower

"I am always looking for ways to serve veggies that my family will eat or that can be made ahead of time for company. This serves both well. The recipe works for each head of cauliflower. For two heads, double the amounts of garlic, olive oil, butter, cheese, and bread crumbs. Can be made the day before and reheated."

  • Preheat oven to 350 degrees.
  • Arrange florets in a baking dish.
  • Heat skillet. Add oil and butter.
  • When butter is melted, add garlic and saute until garlic is tender.
  • Add bread crumbs and 1/4 cup cheese. Toss well.
  • Sprinkle bread crumb mixture over florets.
  • Top with 1 tablespoon grated cheese.
  • Cover and bake for 30 minutes.

  2. I can't believe I forgot to rate this. It is a terrific side for just about any roast or chicken. My DH and I both love cauliflower and prepared this way it went to the top of our veggie list. I used Panko for breadcrumbs and maybe a tad more garlic plus fresh ground pepper. Loved it!
     
  3. This is a wonderful method to fix cauliflower! My husband and I both really enjoyed! I fixed as directed although I did have to leave it in the oven 10 minutes longer than called for. I was very pleased that the cauliflwer did not turn mushy. The topping was perfectly crisped. This will go on my "iix again" list. Thanks for a great recipe.
