  • Peel and quarter potatoes.
  • Combine parmesean cheese, flour, salt and pepper.
  • Melt margarine in 9x13 pan.
  • Mix potatoes with cheese mixture and place in pan.
  • Mix with the butter.
  • Cover and bake 1/2 hour at 350. Stir and bake another 1/2 hour, uncovered.

  1. Big hit at this house! My 10-year old helped peeling the potatoes and putting the flour/cheese mixture together. This is what I learned: we bought 4 potatoes with the idea of having the recipe; I didn't realize each potato was roughly the size of Idaho! So our cheese mixture was a bit on the skimpy side but that was MY fault. Another tip: save yourself a dish and just mix the flour/cheese mixture in a sealable plastic bag, throw the chopped up spuds in the bag and shake it all together. And lastly, I used a fairly deep casserole dish and my dish took a bit longer to bake - I'll use baking dish that the potatoes can be fewer layers and thus cook up with more crispy yumminess. Can't wait to try this on the grill. Thank you!

This year I will be celebrating five years of marriage with my wonderful husband. We have been blessed with a little girl, Adria, who turned one this past summer. I am lucky enough to be able to stay at home with her, so my dreams of being barefoot, pregnant, and in the kitchen have come true!! While Adria is the only one right now, we are hoping for a large family! We live in Springfield, MO but originally grew up in a little town of 200 in Illinois. Over the last few years, I have come to love cooking! Although, I'm by far no expert, I do try! My mother and grandmother have been pretty influential in that! In what little free time I have, I love to scrapbook, read, walk, and travel with my family! In fact, we are planning a trip to NYC very soon.
