Parmesan Potatoes in Foil

ingredients
- 1 medium yukon gold potato
- 1 tablespoon margarine
- 1 tablespoon onion soup mix
- 1⁄4 cup fresh grated parmesan cheese
- 1⁄2 teaspoon black pepper
- cooking spray
- 1 piece aluminum foil, 8 . 5-inch x 11-inch piece
directions
- Preheat oven to 400°F.
- Cut potato in half lengthwise, then cut each half into 6 cubes.
- Lay foil down on a baking sheet and give a light spritz of oil spray, then pile potato cubes into the middle.
- Drop margarine on top (no need to spread around) then sprinkle with soup mix, parmesan and pepper.
- Fold foil around potatoes loosely like a little present and bake for 45 minutes.

Why "SoupCookie"?
My cousin Ryan use to come to my house after school sometimes and was *always* hungry! So he used to make his version of chocolate chip cookies and I can't remember what he did or didn't do right but the cookies never failed to come out flat and doughy and gooey. We'd put them in a bowl with milk and eat it with a spoon.....sooooo good!
To this very day his recipe has not been deciphered ;)
