Parmigiana & Prosciutto Crostini

- 1 loaf of artisan French bread
- 2 tablespoons olive oil
- 1 cup light mayonnaise
- 6 ounces finely shredded parmigiana cheese
- 1⁄4 lb finely cubed prosciutto
directions
- Combine mayonnaise, shredded parmigiana cheese, and cubed prosciutto. Set spread aside.
- Cut bread into ½ in thick slices. Lightly drizzle with olive oil and place on a cookie sheet in a 375° direct heat oven. When crostini begin to brown, remove from heat.
- When safe to handle, evenly top each with the cheese and prosciutto spread. Return to oven and remove when cheese spread melts and toasts. Serve hot.
