ingredients
- 1⁄2 cup of chopped fresh parsley leaves
- 1⁄2 onion (big)
- 3 garlic cloves, more if they are small
- 1 cup olive oil
- 1 teaspoon sugar
- 1 teaspoon salt
- 1⁄2 cup vinegar
directions
- Blend all the ingredients in a blender of food processor. Work until its homogeneous.

Oh YEAH! This really is a KEEPER! I did add 1/4 cup white vinegar. I think a vinaigrette needs it, and wasn't sure if there was an omission or not. And I used part canola oil. But, oh my, this is really good. Just great on a salad full of goodies, especially some gorgonzola. Thick and pale green! What could be better than green food! Thanks for posting this unusual recipe. . . Janet

I am in love with this new vinaigrette!! I did only use 1/4 cup of white vinegar, as others suggested, and 1tsp agave instead of sugar and it was perfect!! I was soooo bored with balsamic. I used it for quinoa tuna noodle salad bc I didn't want to use mayo. Thank you for sharing your Mom's recipe! I will def use it often.
