  • 1 lb parsnip, sliced
  • 5 large potatoes, sliced
  • 8 slices bacon, chopped
  • 1 cup chicken stock
  • salt and pepper, to taste
  • 12 cup cheddar cheese, grated (or whatever cheese you prefer, I used a parmesan mix.)

directions

  • Preheat oven to 350 degrees.
  • Mix parsnips, potatoes and bacon in an ovenproof dish. Pour in stock and sprinkle with salt and pepper.
  • cover and bake for 45 minutes. Sprinkle with cheese and bake for 10 minutes longer.

  1. This was awful, I put in raw bacon, because it didn't say to cook it first. Yuck!
     
  2. I was wary of this recipe not having any onion and/or garlic, but it is quite O.K. the way it is. However, next time I might add some. I cooked the bacon first....could not imagine putting it in raw. The only way I usually prepare parsnips is to mash them with carrots, so this was a nice change, and the potatoes took care of the starch in the meal at the same time. Thanks for posting Jessica......this will become a regular!
     
  3. wasn't sure about this but it turned out to taste great, a real comfort type food and good with a bit of crusty bread on the side.
     
  4. I guess this just wasn’t our thing. Dh and I would have preferred this dish fried, without the chicken stock.
     
  5. Minimal preparation and really delicious! The only changes I made were to add 1 chopped onion, and 4 cloves of chopped garlic. I love parsnips, and they tasted great with these other ingredients. Thank you for sharing this recipe, Jessica!

I just had my 2nd little boy this past Jan of 08. isn't he cute? i had my other little one Jan of 06. he's rotten and a cutie also!! So now i have 2 Jan boys! My hubby's in the Army so we move every few years. Right now we are in our home state of TX! and happy to be back, close to family that can babysit for us! hubby is gone for a whole yr right now, so the baby will grow up without him right now.
