- 4 boneless skinless chicken breasts
- 1⁄4 cup flour
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon paprika
- 1 dash pepper

Stuffing
- 2 cups dry breadcrumbs
- 1 tablespoon chopped onion
- 1⁄4 teaspoon poultry seasoning
- 1⁄4 teaspoon salt
- 11 tablespoons butter, melted
- 1⁄4 cup hot water

Mushroom sauce
- 1⁄2 lb fresh mushrooms, sliced
- 1⁄4 cup finely chopped onion
- 2 tablespoons butter
- 1 -2 tablespoon flour
- 1⁄2 cup heavy whipping cream
- 1⁄2 cup sour cream
- 1⁄2 teaspoon salt
- 1 dash pepper
directions
- Cut a pocket into each chicken breast.
- In a resealable plastic bag, combine flour, salt, paprika and pepper. Add chicken, one piece at a time, and shake to coat.
- For stuffing, combine bread crumbs, onion, poultry seasoning and salt. Add 2 tablespoons butter and water, toss until bread is moistened.
- Fill the pocket of each piece of chicken. Use a toothpick to secure stuffing.
- Dip the chicken in the remaining melted butter and place in a baking dish. Drizzle any remaining butter over the chicken.
- Bake chicken at 325 for 50-60 minutes or until juices run clear.
- Meanwhile for sauce, in a skillet saute the mushrooms and onion in butter until tender.
- Cover and cook for 10 minutes.
- Push the mushroom mixture to the side and stir flour into the butter.
- Reduce heat to low, stir in cream, sour cream, salt and pepper. Cook and stir until mixture thickens. Serve over chicken.

Such great chicken! I thought it was a little strange using bread crumbs as stuffing rather than actual stuffing/bread, but mixed with the rest of the ingredients it was great. I loved the cream sauce even though I had to decrease the amount of mushrooms for DH sake. Will be making this again! Made for My Three Chefs.
