Party Mints

"These come from the Eagle Brand Holiday Magic cookbook. I haven't made these yet but am looking forward to adding them to my gift tins this holiday season. I'm also planning to flatten some and dip them in chocolate like york peppermint patties. Cook time listed is time to let set."

  1. Sorry, but I thought these were terrible! The texture is all wrong- I found these mints to be too granular. (I think the amount of icing sugar called for is too much.) They were not anything like the creamy party mints I was craving. Bascially this recipe makes two pounds of mint flavoured icing!

  3. this has been my peppermint candy recipe for years. the addition of the condensed milk makes it creamier and more luscious, in my opinion. sometimes i i change the extracts and use food coloring to reflect the flavor. a easy and wonderful recipe. fyi, it is really wonderful with lemon or wintergreen flavor.

I live in Arizona with my wonderful husband and our 2 beautiful daughters, ages 4 yrs old and 2 yrs old. We also have a dog and a bunch of fish. I am a trained Montessori teacher and Parent Education Consultant. I worked full time as a teacher until just before our younger daughter was born, at the moment I am a substitue teacher and support person at an excellent Montessori School. I would love to someday be able to be home with our girls full time, but for now they both love being where they are so I try not to feel too badly about it all. I have a huge collection of cookbooks, some of which are still in storage at my mum's. (Moving cookbooks is such a pain!) I also have 5 or 6 file boxes full of recipes, and I'm always adding to it.
