Party Parmesan Pasta Salad

"Don't you love my alliteration, heh heh. A really nice salad perfect for buffet or picnic. Makes a large amount (hence the "party") - decrease recipe as needed. You can omit salami or use whatever veggies you wish (such as cucumber, green onion, red pepper, grated carrot etc.). Has a very nice pesto flavour."

  • In large bowl, whisk together Parmesan cheese (you can use 1/4 cup dehydrated if you can't find fresh), oil, vinegar, mustard, garlic, salt and pepper; set aside.
  • Cut salami into thin strips, slice olives or leave whole as you wish. Cut tomatoes in half.
  • Meanwhile, in large pot of boiling salted water, cook pasta according to package directions or until just al dente. Drain, reserving 1/2 cup (125 mL) pasta water. Rinse pasta under cold water; drain well and add to dressing along with reserved pasta water.
  • Add salami, olives, tomatoes and peppers; toss to combine. Add basil and toss again.
