  • Preheat oven to moderate, 180°C Lightly grease a 20 x 30cm slice pan. Line base and sides with baking paper.
  • In a large bowl, combine flour, coconut and sugar. Add butter, stirring until combined.
  • Press mixture firmly into prepared pan. Bake for 12-15 minutes, until golden. Cool slightly.
  • Meanwhile, in a medium bowl, combine condensed milk, juice and passionfruit. Pour over base and bake for a further 10-12 minutes, until set.
  • Cool in pan then chill until required. Serve cut into squares. Store, chilled, in an airtight container.

I live in Keilor Downs, Victoria in Australia. I am a receptionist in Melbourne. My favorite cook books are anything Weight Watchers or Simply 2 good 2 be true also any muffin or scone cook books. I love cooking easy stuff but I love a challange ocasionaly on the weekends when i have a bit more time. My pet peeve is how much capsicum/bell peppers are in recipes now as i am elergic to them.
