Pasta Bites With Salmon and Caramelized Onion

- 2 tablespoons olive oil
- 1⁄2 cup sweet white onion, julienned (Maya or Vidalia)
- 1 large shallot, julienned
- 1⁄3 cup red onion, julienned
- 2 tablespoons white wine
- 8 ounces clam juice
- 1⁄4 cup milk
- 1 pinch dried thyme
- 8 ounces salmon fillets, cut into 1/2-inch pieces
- 16 ounces small shell pasta
- 2 tablespoons butter
- 4 ounces parmesan cheese, ground
directions
- Heat oil in a large skillet. Add onions and cook, stirring frequently, until soft and brown, about 8 minutes.
- Deglaze with wine and cook 1 minute, scraping up browned bits.
- Add clam juice, milk and thyme plus salt and pepper to taste. Bring to a boil. Lower heat to a fast simmer and reduce by half, about 5 minutes.
- Add salmon and stir gently until cooked through, 3 - 5 minutes. Remove from heat.
- Cook pasta according to package directions. Drain and return to pot. Add butter and cheese, stirring until well mixed. Pour salmon and sauce over pasta and toss. Check seasoning and serve hot with bright green vegetables, warm rolls and a crisp cold salad.
