Pasta & Crab Salad
"This is a new pasta salad that I created for our Memorial Day picnic. My objective was to prepare something that the grandkids would enjoy, so this sweet pasta salad evolved. Rather than make a dressing for it, I thought that Marzetti's Slaw Dressing would give it just the right balance of sweetness and tanginess. I hope you'll try it, and let me know your opinions."

ingredients
- 4 cups elbow macaroni, al dente
- 4 cups peeled & diced potatoes, al dente
- 2 cups diced carrots, al dente
- 6 hard-boiled eggs, chopped
- 1 lb imitation crabmeat, cut into bite sized pieces
- 1 (12 ounce) jar sweet gherkins, sliced about 1/8-inch
- 1.5 (15 ounce) jars marzetti's coleslaw dressing
- 1 teaspoon sea salt
- 1⁄2 teaspoon fresh ground pepper
directions
- Mix all ingredients together in large storage container.
- Refrigerate at least 4 hours prior to serving, stirring frequently.
- Serve in a pretty cut glass bowl.
