  • Heat oil in a large heavy saucepan or Dutch oven.
  • Add garlic& veggies and cook, stirring constantly, for a few minutes until onions are translucent.
  • Stir in spices; add tomatoes with their liquid& concentrated chicken stock that has been dissolved in the boiling water.
  • Bring to a boil, reduce heat and simmer for 15 to 20 minutes.
  • Add pasta and continue cooking for another 15 minutes, stirring frequently.
  • Taste& adjust seasoning.
  • Stir in beans& cook for about 5 minutes longer to heat through.
  • Ladle into soup bowls& top with a few shavings of Parmesan.

  1. Fantastic, Delicious, Healthy, and Easy are just a few of the superlatives that describe this hearty soup. I love to make soup and this one is as good as, or even better than any I've made...even my own recipes. I browned some hot Italian turkey sausage and added it in the begining with the vegetables, and at the end of the cooking time, I tossed in a couple of handfuls of baby spinach. I kept the seasoning the same, and it was perfect for our taste. I'm going to pass this recipe on to quite a few of my friends and family, CountryLady. A big thank you for this recipe!
     
  2. Very good. I added Italian Sausage to mine...which my husband loved. My kids aren't big on beans but they enjoyed it as well. Nice winter soup!
     
  3. Really yummy and I loved how many vegies I could get into this. I also included some green beans and silverbeet and used some homemade chilli sauce instead of the flakes.<br/><br/>Served with some buttered toast. Feeling delightfully full now, but not all that guilty hehe.

In the words of Tracy Byrd, "I'm from the country & I like it that way"!! On May 1, 2008 my husband and I started a new adventure. We'll be living in a 37 foot RV while our new home is under construction. Its out in the country on a dead end dirt road with lots of trees. For the next 4 months or so, most meals will be cooked on the BBQ and life will be full of challenges! We love spending quality time with our friends & family - especially the grandkids!! The photo is 4 generations - my 84 year old mother, myself, my daughter & my youngest granddaughter - taken at the end of 2006. I've participated in many contests & events here on Zaar but this is the first banner that I've posted.
