ingredients
- 2 tablespoons olive oil
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 (15 ounce) can red kidney beans, drained & rinsed
- 1 (8 ounce) can tomato sauce
- 1 cup vegetable broth
- 2 cups water
- 1 teaspoon dried parsley
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 - 1 1⁄2 teaspoon dried thyme, crushed
- 1⁄4 teaspoon pepper
- 1 cup small cooked pasta
- grated Italian cheese (your choice)
directions
- In a large pot saute onion & garlic in oil until soft.
- Add beans, tomato sauce,veggie broth & water.
- Stir.
- Add spices.
- Stir.
- Bring to a boil,then lower to a simmer.
- Simmer about 1 hour.
