Pasta Jambalaya

"This was very good and easy to make. I used fat free cheese instead of what was called for so the points should be a little less. This is 5 points for those on the Weight Watchers diet. From the kitchen of Michele Harvey Thornburg, Moberly MO."

  1. I found a new "favorite" recipe! I was in the mood for a cajun pasta, but not in the mood for a lot of work. This was so delicious and easy that I promptly made another batch after dinner, for the next night. I did add about a cup of tomato juice, since I wanted it to be more saucy. I added an extra tsp of seasoning, too. Both my teens liked it and that is saying a lot! I used a chicken kielbasa and omitted the green chilies. I used a sharp white cheddar and mozz. cheese since I had it on hand (the cheddar had a nice tangy flavor and the mozz. made it creamy). The leftovers reheat great, too. Thanks TLC- Roxygirl

  2. Wonderful!!! Made this on a cold and dreary day. Big hit with my family. I did substitute chili powder for cajun seasoning as I was out. A good way to use small bit of left overs if you are lucky enough to have any... Add enough chicken broth to make a hearty soup.
