Directions

  1. Saute onion in butter until limp.
  2. Add prosciutto and saute for 3 to 4 minutes longer.
  3. Add whipping cream and simmer. Do not boil.
  4. Beat egg well and add to cream sauce.
  5. Continue simmering until you get desired consistency, approximately the same as a thick cream sauce.
  6. Add seasonings and cheese.
  7. In the meantime, cook spaghetti al dente in boiling, salted water.
  8. Drain and add to cream sauce.
  9. Mix thoroughly.
  10. Correct seasonings.
  11. Pour out onto serving plates and top with a little chopped parsley.
  12. Serve at once.
