- 250 g pasta
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 10 garlic cloves, finely sliced
- 3 tomatoes, peeled and chopped
- 1 teaspoon tomato puree
- 1⁄4 teaspoon dried oregano
- salt & freshly ground black pepper
- 140 g canned tuna, forked
- 2 tablespoons sliced black olives
- 1 splash balsamic vinegar (or to taste)
directions
- Add the pasta to a pot of salted boiling water and cook for 8 minutes (or as per the instructions). Drain and keep aside.
- Heat the oil in a medium saucepan and cook the onion and garlic for around 5 minutes.
- Add the tomatoes, tomato puree, oregano, salt and pepper, and simmer for about ten minutes, stirring until blended.
- Add the tuna, olives and vinegar and simmer for a further 5 minutes to thicken sauce.
- Add the pasta to the sauce and mix well.
- Remove from the heat and serve hot.
