Pat's Ham & Bean Soup

"My wife got this from a "good housekeeping" recipe book and made some minor alterations to it. it is very tasty and has a marvelous aroma while cooking."

  • In large kettle over high heat, boil beans in 10 cups of water for two minutes.
  • Remove from heat, let stand for one hour.
  • In large Dutch oven over medium heat, brown sausage.
  • Add onions, stir muntil onions are tender.
  • Stir in ham, cook for a few minutes.
  • Drain asny excess fat.
  • Add beans and their liquid.
  • Add salt & pepper.
  • Cook, covered, over low heat 1 hour or until beans are tender.
  • Add vegetables.
  • Cook, covered until veggies are tender, stirring occasionally.
