Pat's Ham & Bean Soup

- 1 (16 ounce) package dried white beans
- 2 (8 ounce) packages brown n serve sausage links, cut in chunks
- 1 cup minced onion
- 2 cups cubed ham
- 1 teaspoon salt
- 1⁄4 teaspoon pepper
- 1 cup frozen corn
- 1 cup frozen lima beans
- 1 cup frozen peas
- 1 cup frozen cut green beans
directions
- In large kettle over high heat, boil beans in 10 cups of water for two minutes.
- Remove from heat, let stand for one hour.
- In large Dutch oven over medium heat, brown sausage.
- Add onions, stir muntil onions are tender.
- Stir in ham, cook for a few minutes.
- Drain asny excess fat.
- Add beans and their liquid.
- Add salt & pepper.
- Cook, covered, over low heat 1 hour or until beans are tender.
- Add vegetables.
- Cook, covered until veggies are tender, stirring occasionally.
