Paul Newman's Bandito Baked Burritos

"This recipe is from Newmans Own. I love these crunchy burritos. The original recipe calls for a 10oz. can refried beans but all I could find are 16oz. cans, so if it looks like too much you can reserve it as a side dish. The original recipe calls for all the cheese to go on top of the burritos but I like to put some inside as well. He also puts the green chiles on top but I usually add them to the filling."

  • Preheat oven to 350. Lightly grease a 9x13 baking dish.
  • In large skillet, brown ground beef. Drain grease. Add garlic salt, refried beans , salsa and green chiles to the beef.
  • Lay 1 tortilla flat on work surface. Place some of the beef mixture in the center. Top with some cheese. Fold sides toward center almost touching, then roll up from ends till sealed. Place in the pan seam sides down. Repeat with remaining tortillas. Top burritos with more cheese. Bake 30 minutes.
  • Top with the tomatoes, onion and avocado and serve.

If you're looking for a speedy, simple and family pleasing dinner dish, then look no further, because this is it!!<br/>As I was using hot salsa, I left out the chillies, for fear of setting the children on fire....but despite this, it still had enough zing to keep DH and I happy ( and we do like a bit of zing!)....<br/>Accompanied by a fresh garden salad, this was gobbled down by the entire family, with the children ( aged 7 and 9) swearing their allegiance to the burrito.<br/>An absolute winner, that gets extra points in my book, for using basic store cupboard items to create something that my entire family loved me for!!<br/>Made for AUZ/NZ SWAP#84
     
  2. If you are looking for a great starter burrito this is it. Lots of room to bump up the heat which I did. Fast, very easy to put together, nice flavor. I used all the optional condiments-thanks for posting! Made for Spring PAC 2011.
