Paula Deen's Caramel Apple Cheesecake

ingredients
- 1 (20 ounce) can apple pie filling
- 1 (10 inch) graham cracker crust
- 16 ounces cream cheese
- 1⁄2 cup sugar
- 1⁄4 teaspoon vanilla
- 2 eggs
- 1⁄4 cup caramel topping
- 12 pecan halves
- 2 tablespoons chopped pecans
directions
- Preheat oven to 350°F.
- Reserve 3/4 cup apple filling, and set aside.
- Spoon remaining apple filling into the crust.
- Beat together in large bowl, cream cheese, sugar, vanilla, eggs. Pour over pie filling.
- Bake for 35 minutes. Cool.
- Meanwhile, mix reserved pie filling and caramel topping and heat for 1 minute in a small saucepan.
- Spread warm topping evenly over cooked, cooled cheesecake.
- Decorate entire edge of cake with the 12 pecan halves, and sprinkle middle of cheesecake with chopped pecans.
- Refrigerate, share, and enjoy!

DH says this is the best thing he has ever eaten. Enough said? I love being how easy it is, and that it tastes so good. I also love that you don't need 2 pounds of cream cheese and a springform pan for it - you can have it anytime! Next time I make it, I'll chop up the apple pie filling. I also added more pecans to the top. Glad I picked up enough ingredients for 2 pies!

AMAZING!!! and soooo easy!! I've never, ever finished a cheesecake this fast...I loved it! :) I only had a 9" pie crust on hand, and some mini individual crusts- I was able to get make the 9" and 3 minis off of the listed ingredients. I loved not having to make my own crust in a springform pan like most cheesecakes call for. Instead of putting pecan halves on top, I sprinkled chopped pecans around the rim of the cake...so pretty! Thanks for a wonderful recipe, everyone LOVED it!

I started cooking just by helping my Mom out in the kitchen as a little girl. I preferred baking over cooking, as I loved getting all into measuring things and stirring. I always got to stir!
However in the past 5 years I've been the one responsible for making nightly dinners. At first this consisted of the same 10 or so dishes in a constant rotation, but that quickly became boring and I remembered how much my Mom would complain when I was younger about how she always made the same things and she never knew what new dishes to try! Obviously 20 years ago, Zaar wasn't around!
I still cook a lot of the same type of dishes my Mom cooked when we were younger and I try to incorporate as much fresh fruit, vegetables, and herbs into my meals as possible. However Melvin's favorite food of all time is fried chicken so... I make sure he gets a fresh vegetable on the side!
My favorite cook book is my staple cookbook which is the old red and white Better Homes Cook Book. My only pet peeve about cooking is bland food!
