  1. I think this salad is A-Maize-Ing. My neighbors and husband loved it. I used fresh corn off the cob because it is in season. You can use the fritos to dip in the salad or out on top. Be sure to put the fritos on right before serving or they will be soggy. You could add a lot of things to this salad like bacon or black beans, but we decided not to mess with a good thing.
     
  2. This was so so good! My husband ate it for lunch and dinner three days in a row. Probably not the lightest salad around, but next time I could sub some low-fat mayo to help that. It got better and better the longer it sat in the fridge (I left the crushed fritos separate). Will make again this summer!<br/><br/>Update: Made with low fat sour cream instead this time, just as delicious and lots less calories and fat!
     
  3. Made this for a pitch-in and it went over very well. Good and tasty flavor. The next time I will either add a tad more mayo or not crush the corn chips as much as it turned out a little dry. Or maybe I'll try a different brand of mayo. Either way I will be making this again.
     
  4. This was really good - took it for Easter and every bite was eaten. I used one can of corn and one can of Mexi Corn. In place of the Cheddar Cheese, I used the Four Cheese Mexi Blend. I added garlic salt and a 1/4 tsp of cayenne pepper, yummy!!!
     
  5. After reading the reviews here, I made some changes. As it was for a potluck, and I didn't have chips on hand, I left out the chips. I doubled the recipe, using 4 cans of corn to being, drained and rinsed. I used 1/2 mayo, 1/2 sour cream. I added some cilantro, a bit of fresh lime juice, and a bit of garlic powder. I used red onion, and lots of green, yellow, and orange pepper because I had it on hand and to make the dish look more colorful and inviting. I also used a 4 cheese Mexican blend that I had on hand. I added about 1/4 cup pickled jalapeno peppers because I didn't have fresh on hand. A bit of salt and pepper to taste, and then I refrigerated it overnight. The next day, the flavors were amazing and nothing was left. What a great basic recipe that is now part of my collection. I will definitely be making it again.

  2. Easy, and a big hit at the July 4th party. I subbed jalapeno for pepper and used plain fritos.
     
  3. This is an amazing dish and great with bbq! I substituted a bag of frozen corn for a fresher taste and also added cream cheese and a handful of fried onions at the same time I tossed in the corn chips. Fantastic!
     
  4. This was a really good, quick recipe. Used it for the last minute BBQ. I want something more though. I am thinking 1 can chopped green chilies instead of green pepper or even an addition of black beans. Family was 50/50 on this but I liked it and cans see a future for it in my BBQ recipes.
     
  5. My finicky DH loved this. I used red bell pepper instead of green pepper and it gave it a different taste for sure. I only used 1/2 cup of mayonnaise since I am not a big mayo fan. I was thinking of using cole slaw dressing in it next time for a different taste.
