Paul's Favorite Spinach-Walnut Pesto

"I got this recipe from my brother-in-law - - it is his signature dish. I know he got the original recipe from a cookbook, but I do not know the name of the book. The pesto has an intense green color and a pleasingly bold flavor. Serve over thin to regular spaghetti noodles. Also, this pesto freezes very well."

  • Place all ingredients in a food processor and pulse several times until coarsely chopped. Scrape sides of bowl from time to time. Process continuously until the sauce is smooth.
  • If the pesto is too thick, add a little hot water and pulse again.
  • At this point, you can either freeze the pesto for future use or toss immediately with prepared, hot spaghetti noodles.
  • Serve with crusty bread and a good white wine.

  3. Delicious pesto! I added slightly more lemon juice and tossed it in chickpea pasta.
     
  4. Excellent recipe overall! I didn’t put as much olive oil at first. But I trickled it in as needed. In the end I think I used about a cup. I used an extra clove of garlic and added 4 green chilies for a kick. My family loved the blend of everything. I decided to keep the texture a little course. Will be using it this week with some farfalla. As well as some pizza later this week. Thumbs up, will surely be using it again in the near future! YUMMMMS.
     
  5. Just made this recipe. Followed it loosely because I was making while having a play date. My husband raves about it and the other mom took some to her family.

I live in northern Minnesota with my husband. We have a dog, Buddy, who is a shepherd-collie mix. We also have a cat, Tigger, who is a brown Tabby. We both like to cook, but I'm the one that gets our meals on the table on a daily basis. My husband enjoys his role as reviewer/critic. I know a recipe is worthy of a 5-star review when my husband gives me a "top shelf, baby" after finishing his meal. If I don't hear that phrase, it just isn't a 5-star recipe. So far, I've always agreed with his reviews. If I ever think he's wrong, I'll have to rethink our system! I've never been a really good cook, but I've always been great at following directions. Thanks to recipezaar, I just have to find the great recipes and they make me look good! It really doesn't get any better than that!
