  • Preheat oven to 200 degrees Celsius Prepare baking tray lined with baking paper.
  • Put egg whites in a bowl with vinegar.
  • In a separate bowl, mix cornflour and sugar.
  • Prepare a tablespoon. Beat egs whites on high until soft peaks form, then add the sugar mixture one tablespoon at a time, waiting for each tablespoon to become thoroughly incorporated before adding the next.
  • Beat until hard, glossy peaks form.
  • Spoon into 4 individual mounds on the paper.
  • Put them in the oven and immeditely turn the heat down to 110-120 degrees Celsius.
  • Bake for 15 minutes. Switch off the oven and leave them in to cool.
  • Beat whipped cream until firm peaks form. Put each meringue onto an individual plate.
  • Dollop cream on top, then passion fruit and red currants.
  • Enjoy.
