PB, J, & A Sandwich

- 2 slices low-calorie bread (whole wheat)
- 1 -2 tablespoon peanut wonder peanut butter
- 1 -2 tablespoon sugar free jelly
- 1 medium apple (Granny Smith, or any)
- 2 teaspoons cinnamon, divided (or to taste)
- 2 pinches ground allspice, divided
- 2 pinches ground ginger
directions
- LIGHTLY toast bread- just enough to firm it.
- Core the apple and cut in half.
- Set one half aside and thinly slice one half.
- Coarsely chop the other.
- Spread jam on one side, PB on the other.
- Place apple slices evenly over on top of one slice of toast.
- Sprinkle 1 tsp (or more) cinnamon, a pinch of both the allspice and ginger.
- Place other toast on top, spread side down of course.
- You have two options: Make it like a grilled cheese, or microwave it for one minute.
- Meanwhile, while cooking, place chopped apples in a ziploc with remaining spices and shake to evenly to coat.
- You have options here as well: You can add them to the skillet, nuke them for a few seconds, or eat as is!

An interesting sandwich. I have had grilled PB&J sandwiches in the past, but hadn't considered the addition of apples. I used a multi-grain bread, an all natural peanut butter, homemade chokecherry jelly (not sugar-free, but soooo good), and a Granny Smith apple. I cut the cinnamon back to just a sprinkle and omitted the allspice and ginger. A full teaspoon of the cinnamon would have been far to bitter for my taste, and I feared that the other spices would have also seemed overpowering. I slathered the outside of the sandwich with butter and grilled. I like the crispy bread, the creamy, melted peanut butter and the contrast of tart apples and sweet jelly. I would omit the spices in the future.

I used to be vegetarian (even had a touch of the veganism), and I still love me my veggies, but I also love me my meat. I will never stop liking tofu no matter what. Don't knock until you try it cooked PROPERLY. Tofu is so easy to mess up.
