  • Preheat oven to 350°F.
  • In mixing bowl, blend flour, 3/4 cup sugar, baking powder, baking soda and salt.
  • In another bowl, beat eggs, yogurt, melted butter, and almond extract until smooth.
  • Stir into dry ingredients to make smooth, thick batter.
  • Spoon batter into greased 9-inch springform pan or other round cake pan.
  • Arrange peach slices on top in circular fashion.
  • In small bowl, combine almond slices, 2 tablespoons sugar, and cinnamon.
  • Sprinkle over peaches.
  • Bake in preheated 350°F oven 45 to 50 minutes or until done.
  • NOTE:. This recipe also works well using 1/2 sugar and 1/2 Splenda.

  1. This was very good, even my stepson and his friends enjoyed it. The only changes I made were that I coursly chopped the peaches instead of just slicing them and I also made a crumb topping to add on top. I'd like to try this with apples next time.
     
  2. I thought this was a good cake. I made it with wheat flour and used extra peaches. Maybe next time even use a touch more almond extract.

  4. I was in a baking mood today so I whipped up this little beauty! Exceptional taste and very easy to throw together. I made this along with an apple steussel. When it came time for dessert, I asked hubby what he wanted, and he immediately said the peach cake. He wolfed his piece down before I barely took a bite! Looks like I'll be making this one again soon! Thanks so much for a lovely peach dessert that will be a staple in my dessert file!
     
  5. Served this for 4th of July where it was a hit and the leftovers made a great breakfast treat. Used 1/2 sugar and 1/2 Splenda. Yummy!
