Peach Amaretto Butter

ingredients

  • 6 cups peeled, pitted and chopped peaches (around 10 to 12 peaches total)
  • 2 cups sugar
  • 1 cup Amaretto

directions

  • Puree peaches in a food processor or blender until smooth.
  • In a large stainless steel or enamel saucepan combine peach puree and sugar.
  • Bring to a hard boil, stirring constantly, reduce to a simmer, cover and simmer for 30 minutes, stirring often.
  • Add Amaretto and simmer for at least 5 minutes and until the desired thickness is reached.
  • This will not thicken up past where you take it to.
  • Ladle into half pint jars leaving 1/4 inch head space.
  • Process in a boiling water bath 10 minutes at altitudes up to 1000 feet.

  1. Substitute for amaretto liquor? 1/2 teaspoon almond extract plus water/liquid equals 2 tablespoons amaretto .

  2. I made this without a hot water canning pot, and it still came out great, and all my containers sealed. I simply used 2 large pasta pots - one for the butter, and one to boil my jars in. Anyway, on with the review. This is very tasty. I think next time, I will put in slightly less of the amaretto, but over all it is a very pleasant taste. Good on my English muffins in the am. Thanks.
     
  3. I doubled this recipe but cut down on the amaretto by a half a cup; it is great on scones and toast. Very easy and a great item for a gift basket.
     
  4. This is DELICIOUS!! I am making this for the second time today. It did take longer to simmer down to the consistency I wanted, but I am sure this could vary depending on how juicy the peaches you are using. <br/><br/>I actually added more Amaretto than is called for in the recipe as I felt that the Amaretto flavor was hardly noticable at all at only 1 cup. I used about 1.5 cups. This is the second year I have made this!
     
  5. This is a great recipe! I heeded the advice of the other reviews and cut the amaretto in half. And it took a lot longer to get to the right consistency than what the recipe says it will. But the aroma and taste are so worth it! My hubbie asked what I was making and then seemed disinterested. But as it cont. to cook, he asked when it would be done...then if he could have some... and then if I had made enough! Give this one a try! Thanks to DiB for sharing!
