Peach and Apricot Cobbler

  • Use steps 2 - 5 to make the fruit base:

  • Mix the sugar, cornstarch, 1/2 cup of saved juice from the peaches and the apricots in a saucepan.
  • Cook over medium-low heat until the mixture boils and thickens-- stirring constantly.
  • Stir in the margarine, nutmeg, and cinnamin.
  • Add the two fruits and spoon the fruit base into a greased 1 1/2 quart baking dish.
  • Use steps 7 & 8 to make the topping:

  • Mix the flour, sugar, baking powder, salt, butter and egg in a bowl.
  • Spoon this mixture over the top of the fruit base.
  • Bake 400 degrees about 30 minutes.
  • It should be golden brown.
  • Serve with cool whip, whipped cream or vanilla ice cream.

  1. I have used this for years!! like the others i use butter... but one more thing... I always double the topping. It's super good and grandma's always had a thick crust. One other thing my mom loves apricots... this recipe is just as good all apricots or 2cans apricot and 1 can peaches.
     
  2. This is the same recipe I use for peach cobbler when I only have canned fruits available. It is a wonderful recipe. I use butter, not margarine. I use the kind of peaches you get in juice in jars. You can use all peaches if you don't have any apricots on hand, or also use mango, but the mix of peach with apricot is really delicious.
     
  3. Let me tell you how good this is!! I picked a ton of apricots from a tree thinking I would make jam out of it. That is until I ran into this recipe. I've made it three times in two days. The fruit base is the best. I even thought of incorporating that into a crisp. This recipe is the best with Vanilla ice cream or even candied walnuts. you seriously can't go wrong with this recipe
     
  4. Haven't tried this myself, but clipped it from the same cookbook and plan to make it someday. Original recipe includes Garnish: 1 cup heavy cream 2 tablespoons honey, at room temperature 1/2 teaspoon ground cinnamon. Beat together at medium speed until soft peaks form. Serve cobbler warm topped with spiced whipped cream.
     
  5. I have been making this recipe for years. Found this when I was looking to post it. Other than the one tablespoon margarine originally being 1 tbsp. butter, this is the exact duplicate of the G.A.H.B one. It IS a good cobbler.
