Peach and Cream Cake

"This cake is super yummy. It has a similar texture to bread pudding, with the fluffiness of angel food cake. For extra sweetness follow recipe as is, for a mild sweet substitute the yellow peaches for 5 - 7 white peaches."

  • Cake -.
  • Grease pan.
  • Beat together all ingredients except peaches until smooth.
  • pour into greased pan.
  • Drain peaches and place over batter.
  • Topping -.
  • combine all ingredients.
  • beat until creamy.
  • cover peaches and raw batter with topping.
  • (optional) sprinkle over with cinnamon and sugar.
  • Bake at 350F for 35 - 40 minute.

  1. was surprisingly good. at first the batter was a muffin type rather than cake type batter. so i added 1 cup of milk and all the juice from a 15 oz can of peaches. this made it less fluffy. next time i'll leave as is and get out the muffin pan. the cream cheese frosting was great.
