I had some nectarines that were hard as a rock so I decided to make a cobbler out of them. This recipe was especially good for these as you pre-cook the fruit first - a very easy step to do. When I made the batter (I love using bisquick by the way), it seemd a little runny. After it sat in the bowl for about 5 minutes it thickened up a little so don't be tempted to add more bisquick, just wait. I will definitely use this recipe again with other fruits (cherries, blueberry, apples) as well.

This is a fantastic peach cobbler recipe! I didn't measure the ingredients precisely because I was making a heaping 9x13 pan of it and I wasn't sure what size pan you used. i used a whole stick of butter which was probably way too much but it was delicious - nice and moist but not soggy. The topping had a nicer consistency and taste than typical 'Bisquick' recipes (which all seem to have that same 'Bisquick' taste).

Tasty cobbler Dawn! I actually made the peach filling ahead of time and stuck it in the freezer. Pulled out today and threw together the topping for a quick dessert. It worked great and tasted delicious! I did add a little more bisquick than the 2/3 cup b/c I let it sit for a few minutes and was still quite runny. So this filling does freeze well and will be great for peach season! I'll definitely make up some more to do this again! Thanks for posting.
