Peach-Glazed Tofu

"This slightly sweet, very delicious dish will add a new dimension to your tofu repertoire. Serve it with a baked potato and add a green vegetable for a complete meal."

  • 453.59 g tofu (medium or firm)
  • 59.14 ml sweet and spicy light french salad dressing, plus
  • 29.58 ml sweet and spicy light french salad dressing
  • 44.37 ml peach jam
  • 44.37 ml onions, very finely chopped

directions

  • Cut tofu into slices 1 inch thick.
  • Place slices between 2 baking sheets.
  • Top them with something heavy, such as 8 1-lb cans of food or a pile of cookbooks, propping up one end so the water can drain into the lower end of the pan.
  • This will squeeze the water out and compress the tofu.
  • Preheat oven to 350 degrees F.
  • Lightly spray a 6x10-inch shallow baking pan with nonstick cooking spray.
  • Cut pressed tofu into 1-inch cubes.
  • Place in prepared pan.
  • Combine remaining ingredients and mix well.
  • Spoon over tofu cubes.
  • Bake, uncovered, 45 minutes.
  • Place pan under broiler and broil 2 to 3 minutes, until crisp and bubbly.

I live near Rochester NY with my husband and our 18-year-old cat, Fluffy. It's actually Fluffy's house, but he allows us to live here as long as we pamper him and feed him generously. Our daughter, Kree, whom some of you know from Zaar, is also living with us again while she begins a new business venture in real estate. She's the one who got me hooked on Zaar and taught me to try new recipes rather than stay in the cooking rut I was in. In my free time I like to take long rides or sit by the water, both of which I find very relaxing. I also like to do counted cross-stitch and read. I dabble in photography, always looking for that elusive 'perfect' shot. I did more cooking before I started working full-time, and plan to again when I retire (still years away, but dreaming).
