Peaches in Port

"I am posting this for a recipe request. I saw this on Rachael Ray's program "30 Minute Meals". It is a real good recipe for those peaches that are real ripe and you need to use right away. Plus, it is quick and easy and requires no cooking. Cook time is refrigerator time."

  • Slice peaches and place 1 peach to each dessert dish.
  • Drizzle 2 Tablespoons port over peaches in each dish.
  • Place in refrigerator for 30 minutes.
  • When ready to serve, top each peach with large scoop of ice cream.

  2. Love the idea of using peaches rather than other fruits. Can't wait to get back to Portugal where we have wonderful Port. I have also used strawberries marinated in it and topped with either ice cream or vanilla yoghurt. The possibilities are endless, but you must use good Port. Thanks for submitting this wonderful simple recipe.
     
  3. Loved this JQ!!! Used nectarines and it was easy and fabulous. The only problem I had was using the 1/2 a nectarine...the skin made it hard to cut with a spoon...so with my second serving, I cut up the nectarine and served it and the sauce over the ice cream...a definite winner and will make again for company!!
     
  4. This was very good! It went together very quickly and easily and tasted so fresh. The flavor combinations work very well. The ice cream is a must, it mellows the flavor of the port. Thank you for sharing this quick, easy dessert.
     
  5. So easy and so tasty. Had some very ripe peaches and this recipe was perfect for them. Served it with french vanilla ice cream and it was a big hit! Thanks for sharing.
