  • Peel and core apples and cut into chunks.
  • Peel and core peaches, and cut into chunks.
  • Combine apples, peaches, water, cinnamon, and ginger in a medium saucepan, and place pan over medium heat.
  • Cook just until liquid begins to boil, about 5 minutes.
  • Reduce heat to low, stir and simmer fruit until soft, adding more water if necessary, for about 10 minutes for a chunky consistency or 15 minutes for a softer consistency.
  • Stir in sugar to taste-the amount will depend on the variety and sweetness of the apple-and cook briefly to dissolve the sugar.
  • Mash or blend to desired consistency.
  • Cool and serve warm or refrigerate. The applesauce can also be packed into freezer safe containers and frozen.
