  1. Preheat oven to 350°F. Coat muffin tins with non-stick cooking spray.
  2. In a large bowl, mix together buttermilk, egg, mashed banana, peanut butter and melted margarine until blended and smooth.
  3. In a separate bowl, mix together flour, sugar, baking powder, soda and salt. Slowly add dry ingredients to peanut butter mixture. Stir thoroughly until combined.
  4. Pour batter into muffin tins. Bake for approximately 25 minutes until golden brown or toothpick inserted in center of muffin comes out clean. Makes 12 muffins.
