  1. Oil a large rimmed cookie sheet or jelly roll pan. Set aside.
  2. In a 3-quart saucepan combine sugar, corn syrup and water; mix well.
  3. Cook over medium heat, stirring constantly until the sugar dissolves.
  4. Cook until temperature reaches 285°F on a candy thermometer, stirring frequently to prevent burning.
  5. Add peanuts and butter; stir constantly and cook to 295°F.
  6. Remove from heat.
  7. Add vanilla and soda and stir well.
  8. Pour onto cookie sheet and spread as thinly as possible.
  9. When set, loosen from pan and flip over.
  10. Stretch and pullout the brittle until rather thin.
  11. When cold, break into pieces.
