CUPCAKES
- 563.44 g box dark fudge brownie mix (Duncan Hines)
- 2 eggs
- 118.29 ml milk
- 118.29 ml crunchy peanut butter
- 59.14 ml water

FROSTING
- 59.14 ml water
- 473.18 ml powdered sugar
- 44.37 ml creamy peanut butter

TOPPING (optional)
- peanut brittle or chopped peanuts

For the cupcakes:
- Preheat oven to 350°F.
- Combine the brownie mix, eggs, and milk in a bowl, and mix until combined. Add the peanut butter and mix until incorporated. If the batter is too thick, add the water.
- Spoon the batter into paper-lined cupcake tins. Bake for 25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow to cool.

For the frosting:
- Whisk together the water and powdered sugar; once combined, add the peanut butter and mix until smooth. Spread on cooled cupcakes, and top with peanut brittle or chopped peanuts if desired.

They are the peanut butter fanatic's dream. But...when making the frosting, don't add all the water. Add a couple of tbsp. at a time until you reach the right consistency. I learned the hard way the first time I made them. Just like water! Had to refrigerate them for hours to get the frosting to set up. Made them again to take to work and the gradual water addition was just right. Will definately make them again. So easy, So good. Thanks!

I am a full-time graduate student and I also work full-time, which means that I am not likely to make labor-intensive, time-consuming recipes very often! I also struggle with anorexia, and so most of the recipes I create or try are low-calorie and fat-free. I do love to bake, though, and I'm able to do that for others right now, which is nice.
I also keep kosher; that, combined with the fact that I don't really eat meat or cheese, means that most of my recipes (or recipes that I try) are non-dairy and vegetarian, or can be easily adapted to suit that.
Kitchen gadgets are a horrible weakness of mine ... it is just so much fun to try out crazy new products that sometimes I can't help myself! Limited kitchen storage space has managed to sort of curtail that little habit.
