Peanut Butter and Oatmeal Biggies

"came from a Midwest Living magazine recently..I am a big fan of huge cookies...I imagine you could use chocolate chips instead of raisins if you like..or any kind of chips..or why not both?!"

directions

  • grease cookie sheets --
  • in a large mixing bowl, combine peanut butter and butter -- mix 30 seconds at medium speed.
  • add sugars and beat till fluffy --
  • add egg and vanilla and beat well.
  • beat in dry ingredients.with wooden spoon -- stir in oatmeal and raisins.
  • drop dough by 1/4 cupfuls onto cookie sheet -- 3" apart --
  • press into 4" circles --
  • bake at 375* for 10 minutes.
  • cool on wire rack.

  1. VERY YUMMY COOKIES! This recipe is very quick and easy to put together and makes for really big, crumbly and tasty cookies! I made two changes: Used tahini instead of peanut butter, cause Im allergic to peanuts and reduced the sugar to 1/2 cup, so that the cookies had a nice fruity sweetness from the raisins. They came out fabulous and did not last long around here. :) Thanks so much for sharing this lovely recipe with us, grandma2969! Its one of my new staples for sure.

I love cooking, and reading Christian fiction..I have 5 grandchildren..4 boys and 1 spoiled granddaughter...I also have a black cocker spaniel named Tobey..who is very spoiled..Love computer games, cross stitch and reading cookbooks..I was diagnosed with Acute Myeloid Leukemia almost a year ago, on September 26, 2005....was in an out of the hospital for 8 months, doing intensive chemo...I am doing well now, thanks for all the prayers...
