Peanut Butter Cake Bars

- 2⁄3 cup butter, softened
- 2⁄3 cup peanut butter
- 1 cup sugar
- 1 cup packed brown sugar
- 4 eggs
- 2 teaspoons vanilla extract
- 2 cups flour
- 2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1 (11 1/2 ounce) package milk chocolate chips
directions
- Preheat oven to 350. In a large bowl, cream the butter, peanut butter, sugar and brown sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture. Stir in chocolate chips.
- Spread mixture into a greased 13x9 baking pan. Bake at 350 for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Cut into bars.

Very good! I wasn't sure what to expect from these bars - a cookie or a cake bar? They came out somewhere in the middle - not as dense as most cookie bars, but not as light as a cake bar either. They were more dense in the middle - and my younger daughter did not like the crispier edges as much as the middle - but they were very good. The peanut butter flavor is more subtle than I had expected. The recipe is easy and it makes a good sized batch. I made them for a family ski trip.

I found this in March/April Simple and Delicious, and it is exactly that. A very simple easy dessert that looks like you made a large effort. You can't go wrong with peanut butter and chocolate. The only thought I had is I'd like to try this with chocolate chip kisses or peanut butter and chocolate kisses for something different. Thank you for posting this recipe!
