  1. Heat oven to 350°F Spray miniature muffin pan with no stick cooking spray. Set aside.
  2. Combine sugar, brown sugar, butter and peanut butter in large mixer bowl. Beat at medium speed, scraping bowl often, until creamy (1 to 2 minutes). Add egg and vanilla; continue beating until well mixed (1 minute). Reduce speed to low; add flour, baking soda and salt. Beat, scraping bowl often, until well mixed (1 to 2 minutes).
  3. Shape dough into 1-inch balls. Place each ball into prepared miniature muffin cup. Bake for 11 to 13 minutes (check before 11 minute to keep from over-cooking) or until lightly browned.
  4. Remove from oven; press peanut butter cup in center of each cookie. Let cool 30 minutes. Remove from pan. Cool completely.
