Peanut Butter Cookies-The Healthy AND Delicious Version

- 1 cup coconut oil
- 1 cup peanut butter
- 1 1⁄2 cups brown sugar or 1 1/2 cups coconut palm sugar
- 2 eggs
- 1 teaspoon vanilla
- 1⁄2 teaspoon salt
- 1 teaspoon baking soda
- 2 1⁄2 cups rolled oats
- 1 1⁄2 cups whole wheat flour
directions
- In large mixer bowl, combine coconut oil and peanut butter. (I keep my coconut oil melted and my peanut butter in the fridge. The consistency of both worked great for easy mixing.).
- Add the sugar (I have used brown sugar, coconut palm sugar, honey -- ) and mix well.
- Add the eggs and vanilla, mixing well.
- Combine the dry ingredients and add to the peanut butter mixture. Combine well, but do not over mix.
- Scoop (I use a small cookie scoop) into balls on to ungreased baking sheet.
- Flatten each cookie with a fork (wet) or the bottom of a glass).
- Bake in preheated 350 degree oven for 10-12 minutes.
