  • Preheat oven to 375 degrees. Have an ungreased rimmed baking sheet at hand.
  • Combine butter, peanut butter and honey in a microwave-safe bowl. Microwave on HIGH for 1 minute, then stir. Mixture should be smooth and thick; if needed, microwave on HIGH for another minute.
  • Add brown sugar, vanilla and salt, stirring until smooth, then add oats and mix until evenly coated.
  • Spread mixture evenly on baking sheet and bake for 10-15 minutes, or just until browned and crisp.
  • Let cool on baking sheet, then break it up into bite-sized pieces.
  • Store in an airtight container.
  • Granola may be stored at room temperature for up to 2 weeks or it can be refrigerated for up to 1 month BUT it won't last that long!

I am an artist and flute player who gets crazy and nuts-o if I don't get some baking/cooking time in my week. I plan parties just so I can cook and I also take food to all of the neighbors--especially families with teenage boys. Because we are recent empty-nesters, we just can't eat it all.
