ingredients
- 1 cup powdered sugar
- 2 tablespoons creamy peanut butter
- 2 tablespoons corn syrup
- 1 -2 tablespoon milk
- 1 tablespoon imitation vanilla
- food coloring, as desired
directions
- Measure everything into mixing bowl. You want a thick pasty frosting, so start with just a little milk, and add enough to get a spreadable consistency. Beat well with a fork. Add additional corn syrup or milk if needed.
- You can separate the icing into bowls and add different colors if desired.
- Spread on cookies with butter knife. Allow to dry for about an hour, longer if you used a heavy layer.

The flavor is really good on the icing. Reminds me of peanut butter fudge. I put it on peanut butter chocolate chip cookies and they taste great. I gave it 3 stars because the icing never hardened up. It was still sticky after an hour and a half. I followed the directions exactly, so I'm not sure why it didn't harden. Needless today, I couldn't "stack" them as I hoped :-( So I let them harden for another half hour and they are starting to get better. My icing was pretty thin to begin with, but I think you will need to let them sit for 3 hours to get the desired effect.
